What does "once removed" mean when speaking about heritage?

Your mom and her cousins are first cousins.
You are first cousins once removed to your mom's cousin.
Your child is first cousins twice removed to your mom's cousin.
Then it changes when you are in the same generation with another.
You and the child of your mother's cousin are second cousins.
your child and your second cousin are second cousins once removed.
